Introduction
   

The Beef Cutout Calculator is intended to assist cattlemen by providing an estimate of live value and maximum and minimum carcass values by subprimal for various carcass types.

The numbers in this table are the result of an optimization process that determines which subprimal(s) represent the optimum or minimum value for each carcass type. Those numbers appearing in the optimum column represent the value of those subprimals that yield the greatest value. Those numbers appearing in the minimum column represent the value of those subprimals that yield the least value. Total Carcass represents the sum of the values of the optimum and minimum subprimals. The optimum Live Value number is the optimum Total Carcass value less average fabrication costs.
